Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (400g) diced tomatoes
  • 1 can (400g) white beans, drained
  • 4 cups vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 200g pasta (elbow or ditalini)
  • Fresh basil for garnish (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions and garlic, sautéing until softened.
  2. Add chopped carrots and celery, stirring occasionally, and cook for another 5 minutes.
  3. Pour in the canned tomatoes, beans, and vegetable broth, bringing the mixture to a boil.
  4. Add the dried herbs, salt, and pepper. Reduce heat and let it simmer for 20 minutes.
  5. In the last 10 minutes, add cooked pasta to the pot. Stir well and adjust seasoning if necessary.
