Ingredients

  • 500 grams chicken breasts
  • 200 milliliters pickle juice
  • 300 grams plain white rice
  • 1 tablespoon olive oil
  • Salt, to taste
  • Pepper, to taste
  • Lemon slices, for garnish (optional)

Instructions

  1. In a bowl, combine leftover pickle juice and chicken breasts; marinate for at least 1 hour, preferably overnight.
  2. Preheat the oven to 375°F (190°C).
  3. Place the marinated chicken on a baking sheet lined with parchment paper.
  4. Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
  5. While the chicken is baking, cook plain white rice according to package instructions.
