Ingredients

  • 1 cup red lentils
  • 1 tablespoon oil
  • 1 medium onion, diced
  • 2 garlic cloves, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1 can diced tomatoes (400g)
  • 4 cups vegetable broth
  • Salt to taste
  • Fresh cilantro for garnish
  • Instant rice (for serving)

Instructions

  1. Set the Instant Pot to sauté mode and add 1 tablespoon of oil. Once hot, add diced onions and sauté until translucent.
  2. Add minced garlic, grated ginger, and spices (turmeric, cumin, coriander) and sauté for an additional minute until fragrant.
  3. Stir in the rinsed red lentils along with diced tomatoes and vegetable broth, mixing well.
  4. Seal the Instant Pot lid and set to high pressure for 10 minutes. Once done, allow a natural release for 5 minutes before quick releasing any remaining pressure.
  5. Open the lid, stir the dal, and season with salt and fresh cilantro. For a creamier texture, blend part of the mixture if desired.
  6. Prepare instant rice according to package instructions and serve the lentil dal over the rice.
