Ingredients

  • 400g turkey breast
  • 200g butternut squash
  • 150g zucchini
  • 2 tablespoons olive oil
  • Salt to taste
  • AIP-compliant herbs to taste
  • Fresh herbs for garnish

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Season turkey breast with salt, pepper, and any AIP-compliant herbs of your choice.
  3. Place turkey in a baking dish and bake for 25-30 minutes or until internal temperature reaches 75°C (165°F).
  4. While the turkey is baking, prepare the vegetables.
  5. Chop butternut squash and zucchini into even cubes.
  6. Toss the veggies in olive oil, salt, and herbs.
  7. Spread the vegetables on a baking tray and bake alongside the turkey for 20-25 minutes until tender.
  8. Once the turkey is cooked, allow it to rest for a few minutes.
  9. Slice the turkey into medallions and serve with roasted veggies.
