Ingredients

  • 500g sweet potatoes
  • 400g baked beans
  • 200g bell peppers
  • 150g onions
  • 2 cloves garlic
  • 500ml vegetable broth
  • 400g diced tomatoes
  • Spices (chili powder, cumin, etc.) to taste

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Peel and dice the sweet potatoes into small cubes.
  3. In a large pot, combine baked beans, diced sweet potatoes, chopped bell peppers, diced onions, and minced garlic.
  4. Add vegetable broth, diced tomatoes, and your choice of chili spices to the pot.
  5. Mix all the ingredients together until well incorporated.
  6. Bring the mixture to a boil, then reduce the heat to low and allow it to simmer for 20-25 minutes.
  7. If desired, transfer to a baking dish and bake in the oven for an additional 15 minutes.
  8. Once ready, garnish with fresh cilantro before serving.
