Baked Greek Chicken with Tzatziki & Couscous

Ingredients

  • 4 chicken breasts (about 600g)
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt, to taste
  • Black pepper, to taste
  • 200g couscous
  • 200g Greek yogurt
  • 1 small cucumber, diced
  • Fresh dill, to taste
  • 200g grapes, for garnish

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix olive oil, lemon juice, garlic, oregano, salt, and pepper to create the marinade.
  3. Coat the chicken breasts with the marinade and allow to marinate for at least 30 minutes.
  4. Prepare couscous according to package instructions and set aside.
  5. Place the marinated chicken on a baking tray and bake for about 25-30 minutes or until fully cooked.
  6. While the chicken is baking, prepare the tzatziki by mixing yogurt, diced cucumber, garlic, olive oil, and dill in a separate bowl.
  7. Once the chicken is done, let it rest for a few minutes before slicing.
  8. Serve the sliced chicken over couscous, garnished with tzatziki, cucumber slices, and grapes.
