Ingredients

  • 1 cup lentils
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 carrot, diced
  • 1 cup breadcrumbs
  • 2 tbsp tomato paste
  • 2 tsp smoked paprika
  • Salt and pepper to taste
  • BBQ sauce for topping
  • Green beans for serving

Instructions

  1. Preheat your oven to 180°C (350°F) and lightly grease a loaf pan.
  2. Rinse and cook 1 cup of lentils according to package instructions until tender, about 20–25 minutes.
  3. In a skillet, sauté 1 diced onion, 2 minced garlic cloves, and 1 carrot until soft.
  4. In a bowl, mash the cooked lentils and mix them with the sautéed vegetables and 1 cup of breadcrumbs.
  5. Add 2 tablespoons of tomato paste, 2 teaspoons of smoked paprika, and salt and pepper to taste.
  6. Transfer the mixture to the prepared loaf pan and shape it into a loaf.
