Ingredients

  • 4 large bell peppers (red and yellow)
  • 450g lean ground beef
  • 200g cooked lentils
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 tablespoons chopped fresh herbs (parsley or thyme)
  • 1 cup water for baking

Instructions

  1. Preheat your oven to 190°C (375°F).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, brown the lean beef over medium heat until fully cooked.
  4. Add cooked lentils, chopped herbs, salt, and pepper to the beef and stir to combine.
  5. Fill each bell pepper with the beef and lentil mixture.
  6. Place the stuffed peppers in a baking dish and add a splash of water at the bottom.
  7. Cover with foil and bake in the preheated oven for 30 minutes.
  8. Remove the foil and bake for an additional 10 minutes for a slightly charred top.
  9. Let cool for a few minutes before serving.
