Ingredients

  • 2 cans black beans (400g each)
  • 1 can kidney beans (400g)
  • 1 can corn (300g)
  • 1 can diced tomatoes (400g)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • Salt and pepper, to taste
  • Cornbread mix or homemade cornbread ingredients
  • Fresh cilantro, for garnish
  • Sour cream, for serving

Instructions

  1. In a large pot, heat olive oil over medium heat. Add chopped onions, garlic, and bell peppers, sautéing until softened.
  2. Stir in the spices: cumin, smoked paprika, and chili powder, cooking for another minute.
  3. Add the canned tomatoes, black beans, kidney beans, corn, and vegetable broth. Bring to a simmer.
  4. Season with salt and pepper to taste and let simmer for about 20-30 minutes.
  5. While the chili is cooking, prepare the cornbread mix according to package instructions or your homemade recipe.
  6. Pour the cornbread batter into a greased baking dish and bake as directed, usually around 20-25 minutes at 200°C (400°F).
