Ingredients

  • 1 tablespoon oil
  • 2 carrots, diced
  • 2 garlic cloves, minced
  • 1 teaspoon cumin
  • 1 can (400g) diced tomatoes
  • 1 can (400g) black beans, rinsed
  • 4 cups vegetable broth
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat a tablespoon of oil in a large pot over medium heat.
  2. Add diced carrots and sauté until they begin to soften, about 5 minutes.
  3. Stir in minced garlic and cumin; cook for an additional minute until fragrant.
