Ingredients

  • 4 large eggs
  • 100 grams turkey sausage
  • 100 grams shredded cheese
  • 4 large tortillas
  • Salt and pepper to taste

Instructions

  1. In a skillet, cook turkey sausage over medium heat until browned and cooked through. Remove from heat and set aside.
  2. In a bowl, whisk eggs with salt and pepper. Pour into the skillet and scramble until just set.
  3. Add cheese to scrambled eggs and stir until melted and well combined.
  4. Lay the tortillas flat and spoon equal portions of the egg and cheese mixture onto the center of each tortilla.
  5. Place turkey sausage slices on top of the mixture.
  6. Tightly roll up each tortilla, folding in the sides as you go.
  7. Optionally, grill the burritos for 2-3 minutes on each side until golden brown for added texture.
  8. Wrap each burrito in foil or parchment paper for easy storage or freezer for meal prep.
