Ingredients

  • 6 large eggs
  • 1 cup chopped broccoli
  • 1 cup shredded cheddar cheese
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 180°C (350°F) and grease a muffin tin.
  2. In a bowl, whisk together 6 large eggs and add salt and pepper to taste.
  3. Add 1 cup of chopped broccoli and 1 cup of shredded cheddar cheese to the egg mixture.
  4. Pour the mixture evenly into the muffin tin, filling each cup about three-quarters full.
  5. Optional: Add extra broccoli florets and cheese on top for garnish.
  6. Bake in the preheated oven for 20-25 minutes, or until the muffins are set and lightly golden.
  7. Remove from the oven and let cool for a few minutes before removing them from the tin.
  8. Store in an airtight container in the refrigerator for up to a week.
