Ingredients

  • 1 medium onion
  • 2 carrots
  • 2 stalks of celery
  • 1 medium cabbage
  • 4 cups vegetable broth
  • 1 can (15 oz) white beans
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Chop 1 medium onion, 2 carrots, and 2 stalks of celery into small pieces.
  2. In a large pot, heat 2 tablespoons of olive oil over medium heat.
  3. Add the chopped onion, carrots, and celery. Sauté until softened, about 5 minutes.
  4. Stir in 1 medium chopped cabbage, 4 cups vegetable broth, and 1 can (15 oz) of drained white beans.
  5. Add 1 teaspoon of dried thyme, salt, and pepper to taste.
