Ingredients

  • 400 grams riced cauliflower
  • 200 grams diced tomatoes
  • 150 grams diced cucumber
  • 300 grams canned chickpeas, drained
  • 50 grams fresh parsley, chopped
  • 50 grams fresh mint, chopped
  • 60 milliliters fresh lemon juice
  • Salt and pepper to taste

Instructions
