Ingredients

  • 1 cup rice
  • 1 can chickpeas (400g)
  • 1 tablespoon olive oil
  • 1/4 cup parsley, chopped
  • Salt, to taste
  • Pepper, to taste
  • 2 cups water

Instructions

  1. Rinse 1 cup of rice under cold water until the water runs clear.
  2. In a saucepan, combine the rinsed rice with 2 cups of water and a pinch of salt.
  3. Bring the water to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until the rice is tender and water is absorbed.
  4. While the rice is cooking, rinse and drain 1 can of chickpeas.
  5. In a large skillet, heat 1 tablespoon of olive oil over medium heat.
  6. Add the drained chickpeas to the skillet and sauté for about 5 minutes until heated through.
  7. Once the rice is cooked, fluff it with a fork and add it to the skillet with chickpeas.
  8. Stir in 1/4 cup of chopped fresh parsley and season with salt and pepper to taste.
  9. Mix well to combine all ingredients.
  10. Serve immediately or let it cool before storing in airtight containers for meal prep.
