Ingredients

  • 1 medium cauliflower
  • 1 tablespoon olive oil
  • 1 medium onion, chopped
  • 2 garlic cloves, minced
  • 4 cups vegetable broth
  • 400 ml coconut milk
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Begin by chopping one medium cauliflower into florets.
  2. Heat 1 tablespoon of olive oil in a large pot over medium heat.
  3. Add 1 chopped onion and 2 minced garlic cloves, sauté until softened.
  4. Stir in the cauliflower florets and cook for 5 minutes.
  5. Pour in 4 cups of vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Blend the mixture using an immersion blender until smooth.
