Ingredients

  • 2 chicken breasts (about 250g each)
  • 150g pearl barley
  • 200g broccoli florets
  • 100g mini bell peppers (assorted colors)
  • 150g cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Season the chicken breast with salt, pepper, and your favorite herbs.
  2. Grill the chicken on medium heat for about 6-7 minutes on each side, or until fully cooked.
  3. While the chicken is grilling, cook the pearl barley according to package instructions, which usually takes about 30 minutes.
  4. Steam the broccoli florets and mini bell peppers for about 5-7 minutes or until tender.
  5. Once the chicken is cooked, slice it into strips.
