Ingredients

  • 6 large eggs
  • 200g cottage cheese
  • 100g fresh spinach
  • 1 medium bell pepper
  • Salt to taste
  • Pepper to taste
  • Chopped green onions (optional)

Instructions

  1. Preheat your oven to 180°C (350°F) and prepare a muffin tin with liners or non-stick spray.
  2. In a mixing bowl, whisk together 6 large eggs and 200g cottage cheese until well combined.
  3. Chop 100g of fresh spinach and 1 medium bell pepper finely.
  4. Add the spinach and bell pepper to the egg mixture and stir until evenly distributed.
  5. Season the mixture with salt and pepper to taste, and mix well.
  6. Pour the mixture evenly into the prepared muffin tin, filling each cavity about 3/4 full.
  7. Top with chopped green onions or additional bell pepper if desired.
  8. Bake in the preheated oven for 20-25 minutes or until the muffins are set and slightly golden.
  9. Remove from the oven and let cool slightly before serving or storing.
  10. If meal prepping, allow the muffins to cool completely before placing them in an airtight container in the refrigerator.
