Refreshing Greek Orzo Salad with Cucumber, Tomato, and Feta

Ingredients

  • 200g orzo pasta
  • 150g cucumber, diced
  • 200g cherry tomatoes, halved
  • 100g feta cheese, crumbled
  • Fresh parsley, chopped
  • 3 tablespoons olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Cook 200g of orzo pasta according to package instructions until al dente. Drain and rinse with cold water.
  2. In a large mixing bowl, combine the cooled orzo, 150g of diced cucumber, and 200g of halved cherry tomatoes.
  3. Add 100g of crumbled feta cheese and a handful of chopped fresh parsley to the bowl.
  4. Drizzle with 3 tablespoons of olive oil and the juice of 1 lemon. Season with salt and pepper to taste.
  5. Gently toss all ingredients together until well combined.
  6. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
