Ingredients

  • 1 cup Greek yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 2 chicken breasts
  • 1 bell pepper
  • 1 zucchini
  • 1 onion
  • Salt and pepper to taste

Instructions

  1. In a bowl, mix 1 cup of Greek yogurt, 2 tablespoons olive oil, 2 tablespoons lemon juice, 2 cloves minced garlic, 1 teaspoon dried oregano, salt, and pepper.
  2. Add 2 chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 1 hour or overnight for best results.
  3. Preheat the grill or oven to 200°C (400°F).
  4. While the chicken marinates, prepare the veggies. Cut 1 bell pepper, 1 zucchini, and 1 onion into bite-sized pieces.
