Ingredients

  • 2 salmon fillets (approximately 150g each)
  • 1 medium fennel bulb, sliced
  • 2 oranges, segmented
  • 2 tablespoons olive oil
  • Juice of 1 orange
  • Juice of 1 lemon
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Fresh herbs for garnish (optional)

Instructions

  1. Preheat your grill to medium-high heat.
  2. Prepare the fennel by slicing it thinly and setting aside.
  3. Season the salmon fillet with salt, pepper, and a drizzle of olive oil.
  4. Place the salmon on the grill and cook for about 4-5 minutes on each side.
  5. During the last few minutes of cooking, add the sliced fennel and orange segments to the grill.
