Ingredients

  • 500g octopus
  • 400g canned cannellini beans, drained
  • 100g celery, chopped
  • 50g red onion, diced
  • 60ml olive oil
  • 30ml lemon juice
  • 20g fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Start by boiling the octopus in salted water for about 45 minutes until tender. Drain and allow it to cool before slicing.
  2. In a large bowl, combine the cannellini beans, diced celery, and chopped red onion.
  3. Add the sliced octopus to the bowl.
  4. In a separate bowl, whisk together lemon juice, olive oil, chopped parsley, salt, and pepper for the dressing.
  5. Pour the dressing over the salad ingredients and toss gently to combine.
