Ingredients

  • 6 large eggs
  • 100g fresh spinach, chopped
  • 100g shredded cheese (cheddar or mozzarella)
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Preheat the oven to 180°C (350°F).
  2. Grease a muffin tin with oil or cooking spray.
  3. In a large bowl, whisk together eggs until thoroughly combined.
  4. Add chopped spinach and shredded cheese to the eggs.
  5. Season with salt and pepper, and mix well.
  6. Pour the mixture evenly into the prepared muffin tin.
