Ingredients

  • 2 medium eggplants
  • 1 cup almond flour
  • 1 teaspoon Italian seasoning
  • Salt, to taste
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese
  • Fresh herbs for garnish (basil or parsley)

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Slice the eggplant into 1/4-inch rounds and sprinkle with salt. Let them sit for about 30 minutes to draw out moisture.
  3. In a shallow bowl, combine almond flour and Italian seasoning.
  4. Rinse and pat dry the eggplant slices. Dip each slice into the almond flour mixture, coating both sides.
  5. Arrange the coated eggplant slices on a baking sheet lined with parchment paper.
  6. Bake the eggplant for 20-25 minutes or until golden, flipping halfway through.
  7. In a baking dish, spread a layer of marinara sauce at the bottom.
