Ingredients

  • 1 cup lentils
  • 2 tablespoons oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 1 teaspoon ginger, minced
  • 2 teaspoons curry powder
  • 1 teaspoon cumin
  • 1 teaspoon turmeric
  • 3 cups vegetable broth
  • 1 cup rice
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Rinse and soak 1 cup of lentils for 30 minutes.
  2. In a pot, heat 2 tablespoons of oil over medium heat.
  3. Add 1 chopped onion and sauté until golden brown.
  4. Stir in 2 minced garlic cloves and 1 teaspoon of ginger, cooking until fragrant.
  5. Add 2 teaspoons of curry powder, 1 teaspoon of cumin, and 1 teaspoon of turmeric; cook for 2 minutes.
  6. Drain the lentils and add them to the pot, stirring to coat with spices.
