Microwaved Sweet Potato Bowls

Ingredients

  • 2 medium sweet potatoes
  • 1 can black beans (400g)
  • 1 cup salsa (250ml)
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onions
  • Fresh cilantro (to garnish)
  • Salt (to taste)

Instructions

  1. Wash and scrub the sweet potatoes thoroughly.
  2. Pierce the sweet potatoes several times with a fork.
  3. Place the sweet potatoes on a microwave-safe plate and microwave on high for 5-8 minutes, or until tender.
  4. While the sweet potatoes are cooking, rinse and drain the canned black beans.
  5. Chop fresh tomatoes and onions for the salsa if using fresh ingredients.
  6. Once the sweet potatoes are cooked, remove them from the microwave and let them cool slightly.
  7. Slice the sweet potatoes in half lengthwise and scoop out some flesh to create a bowl.
  8. Fill each half with the black beans, chopped tomatoes, and onions.
  9. Add your salsa on top, adjusting the amount according to your taste.
  10. Garnish with fresh cilantro and salt to taste.
