Ingredients

  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1/4 cup vegetable oil
  • 1 egg
  • 1 cup chopped hot dogs

Instructions

  1. Preheat your oven to 190°C (375°F) and grease a muffin tin.
  2. In a mixing bowl, combine 1 cup of cornmeal, 1 cup of all-purpose flour, 1 tablespoon of baking powder, and 1/2 teaspoon of salt.
  3. In another bowl, whisk together 1 cup of milk, 1/4 cup of vegetable oil, and 1 egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir just until combined. Do not overmix.
  5. Fold in 1 cup of chopped hot dogs gently.
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 15-18 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the muffins to cool for a few minutes before removing them from the pan.
