Savory Mixed Vegetable Polenta Squares for Quick Meals

Ingredients

  • 1 liter water
  • 250 grams polenta
  • 200 grams mixed vegetables (zucchini, bell peppers, etc.)
  • Salt, to taste
  • Pepper, to taste
  • 50 grams grated cheese (optional)
  • Cooking oil for sautéing

Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a pot, bring 1 liter of water to a boil; add 250g of polenta, stirring continuously.
  3. Cook on low heat for about 5-10 minutes until thickened.
  4. Stir in salt, pepper, and grated cheese if desired.
  5. In another pan, sauté 200g of mixed vegetables until tender.
  6. Spread polenta evenly in a greased baking dish.
  7. Add sautéed vegetables on top of the polenta.
  8. Bake in the oven for 20-25 minutes until set.
  9. Allow to cool slightly, then slice into squares.
  10. Serve warm or chilled, drizzled with your favorite sauce.
