Ingredients

  • 150g quinoa or couscous
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 red bell pepper, diced
  • 2 cloves garlic, minced
  • 400g canned chickpeas, drained and rinsed
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp paprika
  • Salt to taste
  • 100g fresh spinach
  • 4 whole wheat wraps

Instructions

  1. Cook quinoa or couscous according to package instructions; set aside to cool.
