Ingredients

  • 4 cups vegetable broth
  • 1 cup steel-cut oats
  • 1 egg
  • 30 grams shredded cheese (e.g. cheddar or your choice)
  • Fresh chives, chopped
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring 4 cups of vegetable broth to a boil.
  2. Add 1 cup of steel-cut oats to the boiling broth.
  3. Reduce the heat to low and simmer for 20-30 minutes, stirring occasionally, until the oats are tender.
  4. While the oats are cooking, heat a skillet over medium heat and add a little olive oil.
  5. Crack an egg into the skillet and fry until the whites are cooked and the yolk remains runny.
