Ingredients

  • 450g sweet potatoes
  • 200g turkey sausage
  • 150g bell peppers
  • 100g onion
  • 30ml olive oil
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and dice sweet potatoes into small cubes.
  3. Chop the bell peppers and onion.
  4. In a large bowl, combine sweet potatoes, bell peppers, onion, olive oil, salt, and pepper, mixing until well coated.
  5. Spread the mixture evenly on a baking sheet and roast for 25-30 minutes, until the sweet potatoes are tender.
