Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth or water
  • 1 can (about 400g) artichoke hearts, drained
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil (for roasting)
  • 2 tablespoons olive oil (for dressing)
  • Juice of 1 lemon
  • Fresh herbs (basil, parsley)
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. Rinse 1 cup of quinoa under cold water.
  3. Cook quinoa in 2 cups of vegetable broth or water according to package instructions.
  4. While quinoa cooks, place artichoke hearts on a baking sheet.
  5. Drizzle artichoke hearts with olive oil, salt, and pepper, then roast for 20-25 minutes.
  6. Halve the cherry tomatoes and set aside.
  7. To make the dressing, mix lemon juice, olive oil, herbs, salt, and pepper in a small bowl.
