Ingredients

  • 400g beets
  • 200g farro
  • 150g arugula
  • 2 tablespoons balsamic glaze
  • 2 tablespoons olive oil
  • Salt to taste
  • Pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Wash and peel the beets, then cut them into cubes.
  3. Toss the beet cubes with olive oil, salt, and pepper, and spread them on a baking sheet.
  4. Roast the beets in the preheated oven for 25-30 minutes or until tender.
  5. While the beets are roasting, cook the farro according to package instructions, usually around 20-25 minutes.
  6. Once the farro is cooked, drain any excess water and let it cool.
