Creamy Roasted Cauliflower Mac & Cheese Recipe

Ingredients

  • 400g macaroni
  • 1 medium cauliflower, chopped
  • 3 tablespoons olive oil
  • 50g butter
  • 50g flour
  • 600ml milk
  • 200g cheese (cheddar or your choice)
  • Salt and pepper, to taste
  • 50g breadcrumbs for topping

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Chop cauliflower into florets and toss with olive oil, salt, and pepper. Spread on a baking sheet.
  3. Roast cauliflower for about 20 minutes until golden and tender.
  4. While the cauliflower is roasting, cook the macaroni according to package instructions until al dente.
  5. In a saucepan, melt butter over medium heat. Stir in flour and cook for about 1 minute.
  6. Gradually whisk in milk, stirring continuously until the mixture thickens.
  7. Add cheese and stir until melted and smooth. Season with salt and pepper.
  8. Combine the cooked macaroni, roasted cauliflower, and cheese sauce in a large bowl. Mix well.
  9. Transfer to a baking dish and top with breadcrumbs and extra cheese if desired.
