Ingredients

  • 4 large portobello mushrooms
  • 200g fresh spinach
  • 100g sun-dried tomatoes, chopped
  • 150g mozzarella cheese, shredded
  • 2 cloves garlic, minced
  • Olive oil for sautéing
  • Salt and pepper to taste
  • Fresh herbs for garnish

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Clean the portobello mushrooms and remove the stems.
  3. In a pan, sauté minced garlic, spinach, and chopped sun-dried tomatoes until the spinach wilts.
  4. Remove from heat and mix in shredded mozzarella cheese.
  5. Stuff the mushroom caps with the spinach and tomato mixture.
  6. Add extra mozzarella on top for a cheesy finish.
  7. Place the stuffed mushrooms on a baking tray.
