Ingredients

  • 400 grams firm tofu
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon vegetable oil
  • 300 grams jasmine rice
  • 2 green onions, chopped

Instructions

  1. Start by pressing the tofu to remove excess moisture. Wrap it in a clean towel and place a heavy object on top for about 30 minutes.
  2. Once pressed, cut the tofu into bite-sized cubes.
  3. In a skillet over medium heat, heat 1 tablespoon of oil. Add the tofu cubes and sauté until golden brown on all sides.
  4. In a small bowl, mix together the sweet chili sauce, soy sauce, and a splash of lime juice.
  5. Once the tofu is golden, pour the sauce mixture over the tofu and stir gently to coat. Cook for an additional 2-3 minutes to heat the sauce.
  6. Meanwhile, cook the rice according to package instructions.
  7. Once the rice is ready, fluff it with a fork and divide it into meal prep containers.
  8. Top each container of rice with the sweet chili tofu and garnish with chopped green onions.
