Ingredients

  • 200g tempeh
  • 100ml teriyaki sauce
  • 1 cup brown rice
  • 1 cup edamame
  • Sesame seeds (optional)
  • Green onions (optional)

Instructions

  1. Start by cooking 1 cup of brown rice according to package instructions.
  2. While rice is cooking, cut 200g of tempeh into bite-sized cubes.
  3. In a bowl, mix 100ml of teriyaki sauce and marinate the tempeh cubes for about 10 minutes.
  4. Heat a non-stick skillet over medium heat and add the marinated tempeh cubes. Cook until golden brown, about 5-7 minutes.
  5. In a separate pot, steam 1 cup of edamame for about 5 minutes until tender.
  6. Once the rice, tempeh, and edamame are ready, assemble the dish by layering the brown rice at the bottom, followed by the teriyaki tempeh, and topped with steamed edamame.
  7. For added flavor, sprinkle sesame seeds or sliced green onions on top before serving.
