Turkey Lettuce Tacos with Mango Salsa

Ingredients

  • 500 grams ground turkey
  • 2 teaspoons taco seasoning
  • 1 tablespoon butter
  • 1 ripe mango
  • 1/2 red bell pepper
  • 1 small onion
  • 1 tablespoon lime juice
  • Fresh cilantro
  • 8 large butter lettuce leaves

Instructions

  1. In a skillet over medium heat, melt 1 tablespoon of butter. Add 500 grams of ground turkey to the pan and cook until browned.
  2. Stir in 2 teaspoons of taco seasoning and cook for an additional 5 minutes.
  3. While the turkey is cooking, prepare the mango salsa by dicing 1 ripe mango, half a red bell pepper, and a small onion. Mix them in a bowl.
  4. Add 1 tablespoon of lime juice and chopped cilantro to the salsa mixture. Stir well to combine.
  5. Wash and dry 8 large butter lettuce leaves.
  6. Once the turkey is cooked, assemble the tacos by placing a portion of turkey in each lettuce leaf.
  7. Top each taco with the mango salsa and garnish with additional cilantro if desired.
