Turkey & Spinach Stuffed Peppers

Ingredients

  • 4 large bell peppers (red or yellow)
  • 500g lean ground turkey
  • 200g fresh spinach, chopped
  • 1 cup marinara sauce
  • 1 cup shredded cheese (mozzarella or cheddar)
  • Salt, to taste
  • Pepper, to taste
  • Fresh basil for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a large skillet, cook the ground turkey over medium heat until browned.
  4. Add chopped spinach and cook until wilted, mixing well.
  5. Season the mixture with salt, pepper, and your choice of herbs.
  6. Stuff each bell pepper with the turkey and spinach mixture.
  7. Top with cheese of your choice.
  8. Place stuffed peppers in a baking dish and add marinara sauce at the bottom.
  9. Bake for about 25-30 minutes until the peppers are tender and cheese is melted.
  10. Remove from oven and serve hot, garnished with fresh basil.
