Ingredients

  • 500g ground turkey
  • 1 medium zucchini
  • 1 small onion
  • 1 egg
  • 50g breadcrumbs
  • Salt to taste
  • Pepper to taste
  • 100g carrots
  • 100g broccoli
  • 100g cauliflower
  • Oil for frying

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, combine 500g ground turkey, 1 medium zucchini (grated), 1 small onion (finely chopped), 1 egg, 50g breadcrumbs, salt, and pepper to taste. Mix until well combined.
  3. Shape the mixture into 4-6 patties.
  4. Heat a little oil in a skillet over medium heat, then sear the patties for about 3-4 minutes on each side until golden brown.
  5. Transfer the patties to a baking tray and bake in the oven for 15 minutes to ensure they are cooked through.
  6. While the patties are baking, prepare the veggie medley by steaming or boiling 100g carrots, 100g broccoli, and 100g cauliflower until tender.
  7. Once the patties are cooked, remove them from the oven and serve alongside the veggie medley.
