Ingredients

  • 4 corn tortillas
  • 1 can (400g) black beans, rinsed and drained
  • 1 cup salsa
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 cup vegan cheese (optional)
  • Fresh cilantro for garnish

Instructions

  1. Preheat the oven to 190°C (375°F).
  2. In a mixing bowl, combine black beans, salsa, and spices.
  3. Take a corn tortilla and place a generous amount of the black bean mixture down the center.
  4. Roll the tortilla tightly and place it seam-side down in a baking dish.
  5. Repeat until all tortillas are filled and placed in the dish.
  6. Pour additional salsa over the top of the rolled enchiladas.
  7. Top with vegan cheese if desired.
  8. Bake for 20-25 minutes until heated through.
  9. Garnish with fresh cilantro before serving.
