Vegan Lentil & Spinach Curry: A Wholesome Delight

Ingredients

  • 200 grams lentils
  • 100 grams spinach
  • 400 ml coconut milk
  • 2 medium carrots, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 thumb-sized piece of ginger, minced
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • Salt to taste
  • 1 tablespoon oil for cooking

Instructions

  1. Rinse the lentils under cold water and set aside.
  2. In a large pot, heat a tablespoon of oil over medium heat.
  3. Add chopped onions and sauté until translucent.
  4. Stir in minced garlic and ginger, cooking for another minute.
  5. Add diced carrots and cook until slightly softened.
  6. Incorporate the rinsed lentils, coconut milk, vegetable broth, and spices (curry powder, turmeric, and salt).
  7. Bring to a boil, then reduce to a simmer for about 25-30 minutes until lentils are tender.
  8. Add fresh spinach and cook until wilted.
  9. Adjust seasoning if necessary and serve warm with rice.
