Ingredients

  • 2 chicken breasts (about 200g each)
  • 2 tablespoons za'atar seasoning
  • 2 tablespoons olive oil
  • 1 cup couscous (200g)
  • 1 lemon, juiced
  • Fresh mint leaves for garnish
  • 1 cucumber, sliced

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Rub the chicken breasts with olive oil, then coat them generously with za'atar seasoning.
  3. Place the chicken on a baking sheet and bake for 20-25 minutes, or until the internal temperature reaches 75°C (165°F).
  4. While the chicken is cooking, prepare the couscous according to package instructions.
  5. Fluff the couscous with a fork once cooked and mix in a splash of lemon juice and chopped mint.
  6. Once the chicken is done, let it rest for a few minutes before slicing.
